Join me for 3 nights and 2 action-packed days on my Just Tapas course in the hilltop village of Vejer de la Frontera – which is considered one of the most spectacular of Andalucia’s ‘white villages’. Here, I will teach you the simple secrets to making traditional Spanish tapas, while introducing the regional Andalucian flavours which are unique to this area and advising on wine and Sherry pairings which will bring these flavours alive.
Just Tapas – Culture, Creation & Consumption
For years the Mediterranean diet has been hailed as one of the healthiest ways to eat, with nutritious sun-baked, colourful, fresh foods, and lots of healthy fats from nuts and olive oil. Nowhere is this truer than in the south of Spain where people take a break from the intense heat to sit down for big, long lunches followed by a siesta. In the evenings the tradition is for lighter eating, smaller dishes are often shared amongst a group of friends, making for a social experience. These dishes, of course, are tapas. Even a small dish of paella can be considered as a tapa. The word tapa literally means ‘to cover’ – traditionally a tapa would be placed on top of a drink ordered from a bar or tavern, thus giving the drinker a small appetiser to soak up the alcohol in their drink. As Spain becomes more and more of a foodie hotspot the traditional tapas continue to improve in both quality and innovation.
Who is the Just Tapas course for?
My Just Tapas course is perfect for anyone who has a love of Spanish food, and in particular tapas and small plate dining, but would like to explore beyond the traditional dishes and perhaps try out their new skills at home to impress their friends by creating uncomplicated and delicious tapas dishes. Equally, this course is ideal for anyone visiting Spain on holiday, perhaps for the first time, who would like an introduction to this classically Spanish style of eating; how to understanding a tapas menu, what classic dishes to look out for and which wines to choose.
What to expect on the Just Tapas course
Thursday – Arrive in Vejer, Tapas Tour
We meet in the evening for a tapas tour of Vejer de la Frontera, so it’s straight into the deep end as we wander the cobbled streets from bar to bar enjoying the best tapas & Sherry on offer in Vejer.
Friday – Spanish Classics Tapas Cooking Class
This morning we visit the food market in Vejer to shop for local produce for the day’s class. The region’s local wines and Sherry are a perfect match for tapas but choosing which to have with what dish can be difficult. In this class, we will be trying different wines & Sherry and matching these with our tapas dishes. You will also learn all about the classic Spanish gazpacho, which is a delicious cold soup traditionally made from tomatoes, but we will explore other variations and also make melon gazpacho, and almond & garlic gazpacho.
Followed by a free evening for you to explore the town and, of course, the tapas menus!
Saturday – Local Andalucian Tapas Cooking Class
Today we build on your newfound knowledge of tapas; we will delve deeper into the flavours and intricacies of the dishes and ingredients that are typical of Andalucia. This is also an opportunity to sharpen your Sherry knowledge as we move through the complex pairings and explore outside of the ordinary; for instance, Spanish cheese is so much than just manchego, think a delicate local goats cheese perfectly balanced with asparagus jam!
This evening we test our knife skills in a Jamon carving class and discover preserved tuna and pork in tastings of some of the regions finest conserves.
