I love Moroccan food. I love the use of vegetables and spices, of honey and nuts. Over the years I’ve had the great privilege to cook in many Moroccan homes and I have picked up tips for a more modern type of Moroccan cuisine which I’m excited to share with you. For over 600 years the Moors lived in Vejer and although all aspects of their culture were banished from Andalucia in 1492, their legacy lives on through the local cuisine.

Vejer de la Frontera

Day

This day of delicious and healthy food includes salads and vegetables, with the addition of chicken and possibly fish. ‘Ottolenghi’ style dishes that are brimming with fresh flavours from preserved lemons, carrots, aubergines, olives, almonds and of course mint. Many of these dishes can be prepared in advance so they are perfect entertainment food for busy people. We meet in the morning to buy our produce for the day’s cooking. We will also marinade our lamb for farewell dinner on Wednesday.

After a late lunch, we finish at around 4.30pm. The evening is yours: kick back and relax at your hotel, sample some tapas bars or indulge in a Moroccan-style hammam at the new Califa hammam.

Morocco

Day

There’s an early start to catch the first ferry from Tarifa to the fascinating North African city of Tangier where we will meet our local guide who will accompany us on our food tour of the city. We will be sampling street food and enjoying a delicious local lunch. We will shop for freshly ground spices, dates, nuts, harissa and orange flower water and visit the weavers market. An emergency GnT stop might be required before we head back on our ferry which leaves at 6pm, and arrives into Tarifa at 8pm.

Morocco

Day

Today we will prepare dishes influenced by our visit to Morocco and use some of the delicious ingredients we returned with. More traditional Moroccan dishes such as zaalouk (a dish with aubergines and tomatoes), and tagines. You will learn how to preserve lemons.  A local Moroccan pastry chef will come and show us how to make chicken pastilla & Morocan cookies.  Finishing around 4.30pm.

Farewell Dinner After a short break, you’ll return to Annie B’s at 8pm for our final feast of Spiced Lamb Mechouia, a very special Moroccan dish.  We will be matching all our dishes with Sherry and local wines.
